Ingredients
2 tbsp olive oil
1 large onion finely diced
6 cloves garlic finely chopped
1 tbsp smoked paprika
1 tsp dried oregano
½ - 1 tsp chlli powder
1 tsp coriander
2 cups dried black beans
400g tin diced tomatoes
3 cups vegetable or chicken broth
2 tbsp tomato paste
Pinch of salt – if needed
1 cup brown rice
2 cups water
To serve:
Avocado or guacamole
Sour cream
Corn chips
Fresh chilli
Coriander
Directions
- Set the Ninja® Foodi® SmartLid™ Multi Cooker OL650 to sear/sauté and add the olive oil to the pot
- Sauté the onion and garlic until translucent, about 5 minutes, stirring often
- Add in the spices and stir for another minute then add all remaining chilli ingredients
- Close the lid and change to the pressure cooker function using the smart slider. Set to cook for 10 minutes.
- After the pressure has released open the lid and stir chilli , if you’d like it slightly thicker set your Ninja® Foodi® SmartLid™ Multi Cooker OL650 back to sear/sauté and stir the chilli for another few minutes to thicken
- To cook rice in the Ninja® Foodi® SmartLid™ Multi Cooker OL650 add 1 cup rinsed brown rice to the pot with 2 cups of water and set to pressure cook for 15 minutes
Serve chilli up with some of the rice and top with avocado and sour cream
