Ingredients

  • 2 tbsp olive oil
  • 1 large onion finely diced
  • 6 cloves garlic finely chopped
  • 1 tbsp smoked paprika
  • 1 tsp dried oregano
  • ½ - 1 tsp chlli powder
  • 1 tsp coriander
  • 2 cups dried black beans
  • 400g tin diced tomatoes
  • 3 cups vegetable or chicken broth
  • 2 tbsp tomato paste
  • Pinch of salt – if needed
  • 1 cup brown rice
  • 2 cups water 

To serve
  • Avocado or guacamole
  • Sour cream
  • Corn chips
  • Fresh chilli
  • Coriander

Methods

  1. Set the Ninja® Foodi® SmartLid™ Multi Cooker to sear/sauté and add the olive oil to the pot

  2. Sauté the onion and garlic until translucent, about 5 minutes, stirring often

  3. Add in the spices and stir for another minute then add all remaining chilli ingredients

  4. Close the lid and change to the pressure cooker function using the smart slider. Set to cook for 10 minutes.

  5. After the pressure has released open the lid and stir chilli , if you’d like it slightly thicker set your Ninja® Foodi® SmartLid™ Multi Cooker back to sear/sauté and stir the chilli for another few minutes to thicken

  6. To cook rice in the Ninja® Foodi® SmartLid™ Multi Cooker add 1 cup rinsed brown rice to the pot with 2 cups of water and set to pressure cook for 15 minutes
