One Pot Vegetable Pasta

Ingredients

1 onion, diced

1 red capsicum (bell pepper), chopped

2 zucchini’s, sliced

1 large eggplant, cut into cubes

250g (1/2 a box) raw pasta

1 bottle tomato passata sauce

4 cups/ 1 litre vegetable stoc

1/2 cup canned coconut cream

2 tsp dried mixed herbs

1/2 tbsp minced garlic

1/2 tsp salt

Directions

  1. In the Ninja® Foodi® SmartLid™ Multi Cooker OL650, select the Sauté cooking mode and Sauté the onion in a little olive oil until soft.
  2. Add the vegetables and quickly stir.

  3. Add the remaining ingredients and stir. Then adjust the Ninja® Foodi® SmartLid™ Multi Cooker OL650 to Boil and Pressure mode. Bring ingredients to the boil then adjust the Ninja® Foodi® SmartLid™ Multi Cooker OL650  to Pressure Cook mode and cook for a further 6 minutes.
  4. Release the air then serve and enjoy!
