In a large microwave-safe bowl, add the cream cheese and microwave for 10 seconds. Add the sugar and almond extract, and using a whisk or rubber spatula, combine until the mixture resembles frosting, about 60 seconds.
Slowly mix in the thickened cream, full cream milk, and optional food colouring until fully combined and the sugar is dissolved.
Remove the tub from the freezer and take off the lid. Place the tub in the outer bowl, install the Deluxe Creamerizer Paddle onto the outer bowl lid, and lock the lid assembly onto the outer bowl. Place the bowl assembly on the motor base and twist the handle right to raise the platform and lock in place.
Using a spoon, create a 4cm wide hole that reaches the bottom of the tub. During this process, it’s okay for your mixture to press above the MAX FILL line. Add the pistachios to the hole and process again using the MIX-IN program.
When processing is complete, remove the ice cream from the pint and serve immediately.
