Ingredients

• 1kg baby red potatoes, cut in half or quarters
• 3 large eggs
• 240ml water
• 125g mayonnaise
• 55g sweet relish
• 1 tablespoon yellow mustard
• 2 tablespoons fresh dill, chopped
• 1 tablespoon salt
• 1 teaspoon ground black pepper
• 1 teaspoon onion powder

Methods

  1. First, place the potatoes, eggs, and enough water to cover them into the 6L Ceramic-Coated Cooking Pot that comes with the Ninja Foodi 11-in-1 6L Multi Cooker - OP350.
  1. Once the potatoes and eggs are submerged in water, insert the 6L Ceramic-Coated Cooking Pot into the Ninja Foodi 11-in-1 6L Multi Cooker - OP350. Assemble the pressure lid, making sure the pressure release valve is in the SEAL position. Select PRESSURE and set to HIGH. Set the time to 3 minutes. Select START/STOP to begin.
  1. When pressure cooking is complete, quick release the pressure by moving the pressure release valve to the VENT position. Carefully remove the lid when the unit has finished releasing pressure.
  1. Drain the potatoes and eggs in a colander. Transfer them to a shallow bowl or pan and place them in the refrigerator to cool for 30 minutes.
  1. In a large mixing bowl, whisk together mayonnaise, relish, mustard, dill, salt, pepper, and onion powder.
  1. After the potatoes and eggs have cooled, peel the eggs, then use a fork to mash them well into the mayonnaise mixture. 
  1. Fold in the potatoes. Mix well to fully incorporate.
  1. Serve immediately or cover and refrigerate for serving later.
